<p><strong>Priprema:</strong></p>
<p>Mozak oprati, očistiti od žilica i staviti u slanu vodu da jedanput provri. Ako je potrebno iseckati. U šerpu staviti 1 kašiku maslaca i brašno. Kada se brašno malo uprži (voditi računa da ostane belo) naliti mlekom i kuvati da postane gust preliv. Dodati so, parmezan, sok od limuna i na kraju žumance. Porculansku posudu za pečenje premazati sa malo maslaca pa rasporediti mozak. Preliti mozak bešamelom. Posuti prezlama, mešavinom začina i biberom po ukusu. Peći u rerni zagrejanoj na 200C pola sata. </p>

<p><strong>Potreban materijal za 4 osobe:</strong></p>
<p>8-10 manjih krompira<br />
8-10 sušenih ili svežih listova lovora<br />
100gr maslaca<br />
beli luk u granulama ili glavica svežeg belog luka<br />
100ml maslinovog ulja<br />
krupna morska so<br />
mleveni crni biber<br />
1 kašičica aleve paprike</p>
<p><strong>Priprema:</strong></p>
<p>Krompir dobro operite, osušite i oštrim nožem zasecite skoro do kraja, na što tanje listiće. Najbolje je da se krompir pri dnu probode dužinom drvenim štapićem za ražnjiće, i onda se nožem taman zaseče do ražnjića, bez bojazni da se slučajno preseče skroz. Lovorov list izlomiti na dva dela i na krajevima sa obe strane zabosti u prorez krompira. Ovako pripremljene krompire ređati na pleh u kome ste sipali maslinovo ulje. Sveži beli luk izgnječiti i posuti po krompiru, ili posuti po ukusu belim lukom u granulama. Posoliti i posuti alevom paprikom, pa na svaki krompir staviti po komad maslaca. Rernu zagrejati na 200C. Pleh staviti u rernu i peći sat vremena. Služiti uz ribu ili različita pečenja. </p>

<p><strong>Priprema:</strong></p>
<p>Kupus očistiti od spoljnih listova i nožem izdubiti sredinu-koren. U poseban lonac staviti vodu, malo je posoliti i kada prokuva staviti glavicu kupusa da se kuva. Kada je kupus mekan, izvaditi glavicu i ostaviti je na đevđir da se dobro ocedi od tečnosti. Za to vreme napraviti nadev: Odvojiti žumance od belanceta. U posebnom sudu izmrviti sir i dodati žumanca pa promešati da se sjedini. Belanca ulupati u čvrst sneg i dodati masi od sira i žumanaca lagano mešajući varjačom. Sud u kome će se peći kupus podmazati sa malo svinjske masti. Oceđenom kupusu pažljivo skidati list po list i ređati u sud. U zavisnosti koliki je sud, prvo na dno staviti tri-četiri lista, pa preko staviti malo nadeva od sira i jaja. Ponovo odvojiti lagano listove i staviti ih preko nadeva, tako da se nadev prekrije. Staviti ponovo malo nadeva. Ponavljati postupak dok se sav materijal ne utroši, vodeći računa da se završi kupusom. Pobiberiti i začiniti po ukusu. Na dve kašike svinjske masti propržiti malo prezle i vrelo preliti preko kupusa. Peći u rerni zagrejanoj na 250C nekih pola sata. Pred kraj se može pokriti aluminijumskom folijom da ne pregori previše. </p>

<p><strong>Napomena:</strong><em>Recept za ovaj kupus našla sam u &#8220;Velikom narodnom kuvaru&#8221; iz 1970. godine. Moram da kažem da ja bolji slatki kupus nisam skoro jela. Ovo je jednom rečju-fenomenalno!!! Isto tako, moram da spomenem da umesto svinjske masti može da se koristi i ulje, ali ja mislim da baš mast u kombinaciji sa sirom daje taj poseban šmek jelu. </em></p>

		<title>Njoke od rikote i Pileće ćuftice</title>

<p><strong>Njoke od rikote</strong</p>
<p>Za ovaj recept potrebno je napraviti domaći rikota sir.</p>
<p>Staviti 1,9l punomasnog mleka i 230ml slatke pavlake da provri. Dodati 3 kašike soka od limuna (oko 45ml) i smanjiti temperaturu. Mešati konstantno dok ne počnu da se stvaraju grudvice. Tada sve procediti kroz gustu tkaninu i ostaviti da se ohladi i ocedi u frižideru (najbolje preko noći).</p>

<p>Narednog dana izgnječiti rikotu, dodati 15gr rendanog parmezana, 1 kašiku istopljenog putera, 1/4 kašičicu soli, 2 mala ohlađena jajeta (blago umućena) i umutiti dobro sve sastojke. Ostaviti u frižideru pola sata i zatim oblikovati njoke i svaku uvaljati u brašno.</p>
<p>Prokuvati dosta posoljene vode u loncu. Kuvati njoke oko 3 minuta nakon što su isplivale na površinu.</p>

<p><strong>Pileće ćuftice</strong></p>
<p>Potopiti 50gr hleba u hladnu vodu. Kad upije iscediti dobro hleb, izmrviti ga i dodati mu 300gr mlevenog pilećeg mesa od grudi, 1 jaje, 2 kašike parmezana, 2 kašike sitno seckanog francuskog peršuna, so i biber. Od ove smese oblikovati ćuftice veličine njoka. Ispeći na teflonu na vrlo malo ulja.</p>
<p>Kada su i njoke i ćuftice gotovi, istopiti 100gr putera sa nekoliko sitno seckanih listova sveže žalfije i preliti preko njoka. Služiti posuto parmezanom. Što sam ja na kraju zaboravila. <img src='http://moje-grne.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p><strong>Potreban materijal za loptice:</strong></p>
<p>500ml mleka<br />

80g tvrđeg kozjeg sira isečenog na kockice</p>
<p><strong>Priprema:</strong></p>
<p>Mleko, maslac i so staviti da provri, skinuti sa vatre i umutiti u to 500gr oštrog brašna. Ostaviti da se ohladi i umutiti 2-3 cela jaja, a nakon toga formirati kuglice, na način da prstima umočenim u brašno čupkate testo iz posude. U poluformirane kuglice utisnuti kockicu sira i oblikovati ih do kraja kao kuglice. Kuvati u vrućoj, posoljenoj vodi još neko kraće vreme nakon što isplivaju na površinu.</p>

<p><strong>Potreban materijal za svinjsku džigericu u umaku:</strong></p>
<p>400g svinjske &#8220;crne&#8221; džigerice<br />
1 velika glavica crnog luka<br />
200g korena celera<br />
ulje ili mast, po želji<br />
100ml povrćne supe od kocke<br />
1 kašika koncentrata paradajza<br />
1 kašika gustina<br />
50ml crnog vina<br />
so, mleveni biber, mediteranska mešavina začinskog bilja-po ukusu</p>
<p><strong>Priprema:</strong></p>
<p>Džigericu iseći na tanke rezance. Luk sitno naseckati. Celer iseći na štapiće. Staklasto popržiti luk, dodati džigericu i pržiti uz mešanje dok ne posivi. Preliti supom, umešati celer i pirjaniti oko 5 minuta na slaboj vatri. Koncentrat paradajza razmutiti sa kašikom gustina u vinu, pa time zgusnuti umak. Posoliti, pobiberiti i dodati začinsko bilje.</p>
<p>Džigericu poslužiti sa predhodno pripremljenim kuglicama. </p>
<p>Ovag meseca u <a href="http://kuvarigrice.blogspot.com/2008/11/fbi-rukavice-pravila.html">&#8220;FBI rukaVicama&#8221;</a>, igrici koju je osmislila <a href="http://mamajacooks.blogspot.com/">mamajac</a> isprobavamo recepte sa bloga<a href="http://doubletkitchen.blogspot.com/2010/01/okruglice-od-parenog-tijesta-sa-kozjim.html"> &#8220;In T &#038; T kitchen&#8221;</a>. Meni je taj blog inače veoma drag i mnogo volim da čitam postove na istom. A o fotografijama tek da ne pričam. Divne su! Ali moram priznati da nam se ukusi što se hrane i recepata tiče razlikuju. Ne mislim bukvalno samo na svoj ukus, već i na ukus čitave moje porodice. Zato sam iskrena da budem bila na mukama šta da izaberem. Ima tu i par recepata koje sam odavno &#8220;snimila&#8221;, ali na žalost za njih ne mogu da nađem materijal u mom Boru. Tako sam na kraju odabrala ovaj recept (uz malu pomoć prijatelja) i bio je pun pogodak! Veoma je ukusno, a što je najvažnije-lako za pripremu.</p>

<p><strong>Potreban materijal:</strong></p>
<p>1 manja glavica crnog luka<br />
2 kašike ulja<br />
300gr pirinča<br />
oko 1l supe od povrća (kocka)<br />

<p><strong>Priprema:</strong></p>
<p>Crni luk očistiti, sitno naseckati pa ga propržiti na malo ulja. Dodati očišćen i opran pirinač i dinstati zajedno dok ne postane staklast. Povremeno dolivati toplom supom, pa poklopljeno kuvati na umerenoj vatri 20-tak minuta mešajući povremeno da se pirinač ne bi slepio. Supom nalivati povremeno, ako se kojim slučajem desi da je sve upotrebite pre kraja kuvanja jela, može se naliti i sa vodom. Sveže špargle očistiti, donju trećinu odseći, pa ih iseckati na komade veličine zalogaja. Grašak i šparglu staviti u poseban sud, naliti vodom i staviti da se kuva u posoljenoj vodi nekih 10-tak minuta. Ocediti od tečnosti, pa grašak i šparglu dodati pirinču. Ovčji sir narendati na sitno rende. Sremuš oprati i sitno naseckati. Gotovom pirinču, neposredno pre serviranja umešati ovčji sir i seckani sremuš. Začiniti po ukusu solju i biberom, pa posuti seckanim parmezanom. </p>

<p><strong>Napomena:</strong> Ovo je prvi put da sam došla u dodir sa šparglom. Kod nas u Boru je nikada do sad nisam videla. Prošlog vikenda sam naletela na ženu koja je prodaje na pijaci i po njenim rečima trebalo bi da je sada bude uvek. Ja sam se sad bacila na isprobavanje recepata sa datom namirnicom i već sam skupila neke potencijalne recepte koje ću isprobati u budućem periodu. Ujedno se zahvaljujem i <a href="http://palachinka.blogspot.com/">Mariji</a>, koja mi je takođe pomogla u izboru i na trudu oko prevođenja pojedinih recepata, pošto kao što ste upoznati, ne baratam baš dobro stranim jezicima. </p>

I to moram priznati odavno, samo što ja nikako da ga spremim. I eto konačno je došao na red.  Napisaću vam njen originalni recept onako kako ga je ona meni poslala, uz naznake gde sam ja nešto promenila. </p>

<p><strong>Potreban materijal:</strong></p>
<p>680gr pilećeg belog mesa (ja sam stavila 700gr)<br />
1 patlidžan<br />
2-3 manje tikvice<br />
2 konzerve paradajz sosa od 400ml ( ja sam koristila <a href="http://www.nectar.rs/index2.php">Tomatello</a>)<br />
1 konzerva seckanog paradajza, po mogućnosti Italian style (ja sam koristila sveži paradajz, stavila sam dva veća)<br />
1 glavica crnog luka<br />
beli luk po želji (ja sam stavila 3 čena)<br />
kašičica šećera<br />
pola kašičice suvog bosiljka<br />
pola kašičice origana<br />
pola kašičice timijana<br />
pola kašičice bibera<br />
i stavila sam i začin C, to po receptu nije onavezno ali ja ne mogu bez začina</p>
<p><strong>Priprema:</strong></p>
<p>Pileće belo meso iseći na manje kockice. Isto tako i povrće iseći na kockice i sve sastojke odjednom sjediniti i staviti u dublju šerpu. Ja jedino nisam stavila odmah začin C, njega sam dodala na kraju. Naliti vodom koliko da prekrije namirnice i kuvati na umerenoj temperaturi. Gulaš treba da bude gust. Voda može da se nalije povremeno, ali vodite računa o količini. Kuvati dok meso i povrće ne budu mekani. Iskrena da budem pošto sam ja još nešto u isto vreme sređivala, nisam baš obratila pažnju na vreme, ali nekih sat i po sigurno je potrebno. Uz gulaš servirati testeninu po želji. Po Goraninoj preporuci se može posuti i parmezanom, ali ja nisam ovog puta.<br />
Inače je jako ukusan i nama se jako dopao.</p>

<p>2 goveđa odreska (svaki nekih 250-300gr)<br />
2 obarena krompira<br />
100gr kačkavalja<br />

2dl kisele pavlake<br />
biber, mešavina začina, ulje</p>
<p><strong>Priprema:</strong></p>
<p>Kuvani krompir narendati na krupnije rende. Kačkavalj iseckati na male kockice. Takođe sitno naseckati i tvrdo kuvano jaje. Sve sastojke podeliti na dva dela. Svaki odresak posebno dobro izlupati čekićem za meso sa obe strane. Izlupano meso prvo premazati kiselom pavlakom, posuti sa malo bibera (po ukusu) i mešavinom začina. Preko pavlake staviti prvo rendani krompir, kačkavalj a zatim i jaje. Posupak ponoviti i sa drugim odreskom. Nadevene odreske sklopiti u vidu kocke i kuhinjskim koncem ušiti gde je potrebno da nadev ne bi iscurio tokom prženja. U tiganju zagrejati ulje i na umerenoj vatri pržiti odreske. Okretati ih da se isprže sa svih strana. Gotove odreske poslužiti uz krompir pire, koji se prelije softom koji je napravilo meso dok se pržilo u tiganju.</p>

<p><strong>Priprema:</strong></p>
<p>Govedinu iseckati na manje kockice i staviti u lonac, naliti sa 1l vode i staviti da se kuva. Kada provri, skloniti penu. Šargarepu očistiti i prepoloviti po dužini, zatim je iseći na komade nekih 4cm. Staviti je u lonac sa mesom. Dodati lovorov list, sitno iseckan crni luk i beli deo praziluka. Poklopiti i ostaviti da se na umerenoj vatri kuva sat i po. Po potrebi nalivati sa malo vode, ali ne preterano. Jelo treba da bude kremasto, ne retko. U drugoj posudi istopiti maslac, sipati 2 kašike brašna i propržiti mešajući, naliti sa malo vode u kojoj se kuvalo meso. Jaja umutiti sa kiselom pavlakom, dodati u sud sa proprženim brašnom, izmešati da se sjedini i dodati u lonac sa mesom i šargarepom. Posoliti, pobiberiti i začiniti mešavinom začina po ukusu. </p>

<p>Piletinu i svinjetinu iseći na manje kockice. Pileću džigericu očistiti od žilica i razdvojiti na posebne komade. Piletinu, svinjetinu i džigericu staviti u smesu napravljenu od ulja, začina i gnječenog belog luka da malo odstoji. Šampinjone na četvrtine (ako su veći). Crni luk takođe iseći na četvrtine. Slaninu iseći na manje kockice. Na ražnjiće ređati naizmenično sastojke i peći na roštilju.</p>
